For tourists, entering Morocco is not easy – direct flights from Russia are often canceled, transfers are not possible in most European countries and Turkey, but the borders are open, so it is quite possible to try a mix of surfing, deserts and oriental flavor in one of the most European countries in Africa. To make your experience even more intense, keep a selection of must-taste dishes, no matter when you try them: now or a little later.

National cuisine in Morocco is a real mix of sweet fruit and meat flavors. Everything is very spicy, aromatic and incredibly tasty. Our favorites among traditional food:

1. Tajine

Moroccan hit. This is a stew that is cooked over low heat for several hours in a special pot with a lid, which bears the same name as the dish itself. It contains large pieces of lamb or chicken, as well as potatoes, eggplants, onions, tomatoes, spices and even quince. The mix of tastes turns out to be bombastic, and the price of a standard portion is low: about 50 MAD (1 MAD = 8.5 rubles).

A variation on the theme is mrusia. In its composition, most often lamb stewed with ginger and spices, to which plums, almonds and raisins were added. The result is a sweet-spicy taste that goes well with chickpeas, rice or lentils. Required for tasting.

2. Couscous

Another dish that Morocco is famous for. It is based on the cereal of the same name, cooked in a special way in a koskusnit – a small saucepan. This cereal is mixed with vegetables cooked together with meat. Most often, chicken or lamb is used, but sometimes couscous is made vegetarian and replace meat with chickpeas. The most popular version of couscous is called “Seven Vegetables”: it includes carrots, turnips, pumpkin, onions, zucchini, tomatoes and bell peppers. Instead of turnips, cabbage or potatoes can be used – it all depends on the place where you order it. Such splendor is also worth about 50 MAD.

3. Moroccan salad

It would seem like a common vegetable mixture of tomatoes, cucumbers, green peppers, local olives and potatoes, but it is served everywhere and is terribly loved. You can even try to make it at home – however, it is not known whether you will achieve the same taste without local spices. In popularity, it outshines the even more exotic shergi, consisting of radishes, greens and citrus fruits. Salad prices are in the range of 15-20 MAD.

4. Bistiya (pastille)

Puff pastry, which used to be pigeon meat, and now, of course, more often chicken. It is difficult and time-consuming to cook it, but it turns out to be something very juicy and airy. There is a vegetarian option – with nuts, onions and parsley.

5. Harira

A soup that conquers from the first spoon: a little lentils, lamb and tomatoes and a lot of spices, especially coriander. You can add chickpeas and noodles to taste. This soup is very cheap and can be eaten for as little as 10 MAD.

6. Ebaba

An unexpected dish, more interesting for lovers of sweets than traditional soups. It is based on sweet jam or honey, bread and raisins, cooked together.

7. Rgaif

A local hybrid of pancakes and pies, inside of which various fillings: from meat and cheese to almonds and honey. Often served with salad or spicy pasta. Good street food option in bazaars.

8. Shebakia

Moroccan chak chak: also fried dough, but rolled in the shape of a rose and drenched in honey with the addition of rose water and sesame seeds. Shebakia is a cool edible souvenir from Morocco.

9. Begrir

Lush pancakes with holes, made with semolina and without eggs, with yeast and baking powder. Also a good representative of street food or quite a full breakfast.

10. Kaab el-ghazal

This tricky name hides the phrase “gazelle horns”: this is the name of traditional bagels with marzipan or almond cream, often with the addition of nuts or honey. To enhance the effect of the sweet bomb, they are also sprinkled with powdered sugar. Try it!

All this should be washed down with mint tea with a lot of sugar or spiced coffee, which is often brewed with chili peppers. Muslims do not drink wine, but in tourist places you can find good local red or pink.
